While cities like Houston and San Antonio are now embracing tacos al vapor as a must-try food trend, El Pasoans already know there’s nothing better than a taco that’s been steaming away until perfectly soft and packed with flavor.

Texas Is Falling in Love With “Sweaty Tacos” But El Paso Was Already Ahead of the Curve

One of the funniest things about food trends is watching the rest of the country “discover” foods Borderland families have been eating forever.

Tacos al vapor aren’t flashy or overloaded with trendy toppings. They’re simple, comforting, affordable, and dangerously easy to eat by the dozen!

Typically filled with potato, beans, deshebrada, or chicharrón, the tacos are stacked together while heat, steam, chile oil, and fillings soften the tortillas into that signature texture taco fans know and love.

 

The Rest Of Texas Is Finally Catching Up

According to the original feature, restaurants in cities like Houston and San Antonio are seeing tacos de canasta surge in popularity, with some spots selling out every weekend.

But in El Paso, tacos al vapor never needed a comeback.

That’s probably because Borderland food culture has always stayed closely tied to Ciudad Juárez and traditional Mexican street food. A lot of the foods the internet suddenly becomes obsessed with are just everyday staples here.

  • Birria? Already knew.
  • Street corn? Obviously.
  • Tacos al vapor? Check!

Why Tacos Al Vapor Hit Different

Part of the appeal is how deceptively simple they are.

The tortillas become incredibly soft without falling apart, soaking up flavor from seasoned oil, fillings, and steam. They’re messy in the best possible way- the kind of taco that practically demands an ice-cold Coke or agua fresca on the side.
