
Michelin Says The Best New Wave BBQ In The US Is In Texas
Ok, we didn't the #1 spot but, according to Michelin, 3 of the top 10 best new wave BBQ joints in the USA are in Texas.
BBQ isn't just brisket, sausage and/or chicken with potato salad and slaw anymore. New mashups of different cuisines put a spin on traditional "Texas" BBQ dubbed "New Wave BBQ".
These new approaches have brought Michelin and their eagerly sought "stars" to the table, so to speak because; this ain't your Daddy's "Q" anymore ...
Michelin awards stars to various restaurants, bars, hotels, etc based on how good they are and earning one isn't easy. BBQ joints, historically, don't seem to have really been too high on their list. This "New Wave" of BBQ got their attention though and Texas did really well.
But something more compelling than tire-company hype has unfolded over the past few years: That instantly familiar platter has begun to change. Pitmasters from coast to coast are going rogue and giving Texan tradition a personal spin by incorporating spices and dishes from Asia, the Middle East, and Latin America. - esquire.com
The Michelin Top 10 featured 3 Texas BQ joints, err .... restaurants, and I must admit, pics of the platters look pretty damn tasty. You can see the top 10 here and these are the Texas eateries made the list.
- KG BBQ in Austin was #2 with non traditional BBQ seasonings like cumin, coriander, and za’atar on the beef. Or pork. Or, whatever.
- Burnt Bean Co, in Seguin, Texas was #3 putting a Tejano spin on their "Q".
- Sabar BBQ in Fort Worth was #8 offering Nihari which, I just read, is a slow-cooked stew made with beef shank. It's offered as a side at Sabar.
