Rulis International Kitchen has been delighting El Paso foodies for almost 20 years and has gone through some changes. Now Chef Rulis is bringing it full circle.

Rulis International Kitchen was not designed, as some might infer by the name, to serve dishes from all over the world. The original premise was a lot simpler; to offer cuisine with multi cultural origins.

Not several menus ... Italian, Japanese, Mexican, Greek, etc, ... but one menu with offerings built on styles and cuisines shaped by the many cultures that have called El Paso home. Cool idea, huh??

The restaurant biz is a tough one and to be successful, they have to constantly adjust, revamp and renew. They also have to really know their customers. That original concept is what Rulis International Kitchen fans have clamored for and, good news folks - Chef Rulis heard you.

Chef Rulis is not only an amazing chef, he's also a history buff - especially with regard to the history of food. His YouTube channel is a wealth of interesting, often surprising, food facts like:

  • Flour tortillas actually came via the Chinese in the 1800's. Something they needed for "Mandarin Pancakes" was hard to find here. That missing element morphed them into flour tortillas.
  • Saffron is the worlds most expensive spice.
  • The roots of Cajun and Creole food in El Paso go back to the Buffalo Soldiers stationed here in the 1800's.
  • Sushi got here via Japanese brought to Juarez to work the maquiladoras'.

Then, there are the native American elements who hooked up with Spanish and French styles way back. In short, "El Paso" style food is built on about 600 years of melding, blending, guessing, and "doing the best you can with what 'ya got".

On top of the new look and revamped menu, the actual menus themselves are going to be pretty cool. Soon, they will have QR codes next to each item. When you click on it, you'll get a video explaining the dish, where it originated and/or how "El Paso-ized" it may be.
