Today is National Cheese Day. It is a day to recognize cheese in all it's myriad forms. From the lowly Kraft Single to the $420 per pound White Stilton Gold, we love our cheeses. Not as much as the French, though. The average French person eats 60 lbs of cheese per year while the average American eats less than half that.

Interesting cheese fact: It is believed that cheese was created over 4,000 years ago, by accident. The theory is that ancient people would transport milk in containers made from the stomachs of animals. After a long journey, either on foot or on horseback, they opened their pouch to find that the milk had separated in liquid and solids, the solids being the curd or "cheese". The thinking is that an improperly cleaned animal stomach pouch still contained enough enzymes to kick-start the separation process. Which means that some ancient person opened up his pouch expecting to take a refreshing gulp of milk, saw a mass of curdled goop and decided, "Hell, I may as well give it a try."
