The vegan menudo looks and tastes just like traditional menudo however this batch is made with lion mane mushrooms. The mushrooms texture and taste is similar to tripe but without the calories or the meat. These lion mane mushrooms are large, white, shaggy mushrooms that resemble a lion’s mane and are grown locally by the chef at The Station at Sunset including the chilies that they use for the broth. They even make their own hot sauce which can be perfectly paired up with papas locas.
