A restaurant that prides itself on serving “lots of food” has expanded into El Paso foreshadowing my waistline’s imminent expansion.

Weck’s, the Albuquerque-based restaurant chain known all over the state of New Mexico for its ‘full-belly tradition’ of big breakfasts and bountiful brunches, has opened its first location on El Paso’s west side.

Best-known for its enormous breakfast burritos, a mountain of hash browns they call the Papas, and belly-busting breakfast plates, the menu also features a variety of lunch items, including burgers, sandwiches, and salads.

And while they all look delicious, I mean, you can't go wrong with mounds of melted cheese, I'm particularly looking forward to the pancakes with chopped green Chile and bacon inside.
