It's September and that can only mean one thing: it's chiles en nogada season!

Chiles en nogada are a traditional Mexican dish where a poblano pepper is roasted and then stuffed with ground beef and pork, raisins, onion, garlic, peaches, apples, pear and crystallized orange and covered with a delicious white walnut sauce. They're then topped with pomegranate seeds- and sometimes more walnuts. I prefer them without the raisins, but that's just me! The beauty of the dish is that it can be personalize to your own tastes.

Although some of the history of how this dish came to be is a bit hazy, the one thing we all know is that this dish is best enjoyed in the month of September. First, because pomegranates are in full season this month. The dish is also said to resemble the colors of the Mexican flag, red, green and white- thus making it the perfect meal for those celebrating Mexican Independence day and basically anyone looking to celebrate Hispanic Heritage month!
