KLAQ BBQ is this weekend and I’m gearing up for all the delicious side dishes. I know it’s a little crazy to look forward to the potato salad and cole slaw more than a juicy rack of ribs, but I’m just not a big fan of meat. Don’t hate me, Texas.

    Salad Skewers

    This one is my favorite. Skewer a cherry tomato, a basil leaf, and a small ball of mozzarella cheese. Place it on the grill for about 2 minutes, not over direct heat, just until the cheese warms. Drizzle a little balsamic vinegar over each skewer after you remove it from the heat. So delicious.

    Pineapple

    Honestly, I think you could grill most fruits, but there’s something about grilled pineapple that’s extra delicious. I usually skewer large chucks of pineapple, like in the picture, but I’ve seen the light. Here’s a new way to grill your pineapple and it will change your life. Cut off the top of the pineapple, wrap the sides in tin foil, place it standing up-right on the grill. You’re basically making a heated tub of pineapple goodness. After an hour or so, take it off, let it cool, slice it and taste how much sweeter is has become.

    Pizza

    This one is easier than it looks. Grab a pizza dough mix at the grocery store. Mix it, roll it out, throw it on the grill for 2 minutes on each side. When it’s a little more firm, you can start to add your toppings. Grill until cheese melts, then enjoy. It’s that easy.

    Banana Boats

    Here’s an easy alternative to S’mores. Take a banana, keep the peel on, cut it almost all the way through, length-wise. Then take toppings like chocolate chips, caramel bits, graham cracker crumbs and more, then stuff the inside of your banana. Wrap the whole thing in tin foil, them grill for 5-10 minutes until toppings are melted.

    Pound Cake

    I guess you could probably grill several types of cake, but pound cake is the easiest. Slice it into single serving pieces, grill for 1 minute over low heat. When the cake is warm and starting to show grill marks, remove from heat, top with strawberries and whip cream and enjoy. A grilled strawberry shortcake.
